The first THE EGG & I Restaurant opened in Fort Collins, CO, in 1987 and over the years has grown primarily through franchising. At the end of the most recent fiscal year, franchisees operated 36 of the 43 then-current locations. Like several other developing chains in the U.S., THE EGG & I is a breakfast\/lunch only concept, open from 6:00 AM until 2:00 PM (2:30 on weekends). The restaurants are typically in neighborhood or commercial shopping centers and average 3,300 to 4,000 square feet with about 140 seats.
